Employee theft amounts to 4 percent of food sales at a cost in excess of $8.5 billion annually, according to the National Restaurant Association (Neighbors 2004.) The small Business Administration indicates that 60 percent of business failures are a result of employee theft.

There are several reasons why the restaurant industry is extremely susceptible to employee theft. They are:
